Healthy Food Recipes and Ideas

A friend of mine recently asked me if I could give her some advice on healthy food recipes and ideas. Quite often she’s running late and never seems to have time to eat the proper foods, so she just “nukes” frozen dinners or eats out all the time at fast food restaurants. Sadly, time is usually a factor that makes a Low Sodium Diet difficult. Here’s the advice I gave her:

When you know tomorrow is going to be crazy busy, cook rice (I prefer brown rice for this recipe) the day before and put it in the fridge. Some foods like rice can be made a day or two in advance and refrigerated until needed. One of my favorite things to have when I’m short on time is “fried” rice.

Here’s what you’ll need:

  • Sesame Oil
  • (1) Green Onion, chopped
  • Frozen peas
  • Diced carrots
  • 2 eggs, scrambled
  • the rice you prepared ahead of time

Heat a saute pan with sesame oil. Once hot, add the carrots and saute for approximately 4 minutes. Then add the peas. Next add the brown rice and saute for about 2 minutes. Then make a spot in the middle of the pan (dig a hole in the rice… mom said you can play with your food just this once) and pour the eggs into the middle. Scramble completely before mixing with the rice but don’t worry if the eggs run into the rice. Add green onions and saute for another 2-3 minutes.
